Lazy Easy Chocolate Walnut Cake

Mangy has been annoying me lately, demanding home made cake. While I enjoy cooking, I HATE cleaning up, and cake making is usually a messy affair!
I finally caved in today and found this one bowl chocolate cake recipe. But being the pain that he is, Mangy didn’t feel like fudgy cake tonight! So I had to make something up for him (the things I do to keep peace in this house). This is what we had in the end:

The cake was beautiful. Light, chocolatey but not dry. It was rich without being cloying.

The only reason it was baked in a bundt pan was because that’s the only silicone baking pan I own and I couldn’t be bothered greasing a tin for a Monday night baking session!

You will need:
1 1/2 cups walnut meal – I just used a coffee grinder to grind up the walnuts
1 cup self raising flour (or plain flour with 2 teaspoons of baking powder)
1 cup sugar
4 tablespoons cocoa powder
3 eggs
3 tablespoons vegetable oil – you could use butter, but it seemed like too much effort to melt 3 spoons of butter
1/2 cup milk
1/2 cup chocolate pieces
1 teaspoon vanilla essence


Blend everything (except chocolate pieces) up with an electric beater until fluffy. Stir through chocolate pieces, pour into a greased tin, bake for 50 minutes in a preheated 180 degree oven. Once cake is cooked, let cook, dust with icing sugar and serve.
