Coconut Rice

Coconut Rice is incredibly easy to prepare if you have a rice cooker, and if you don’t – buy one! They’re incredibly cheap, we bought ours for about $15.00 at Big W. Otherwise you can find bargains on eBay as well.

A rice cooker can be a life saver when preparing a week night meal. 2 cups of uncooked rice + 4 cups of water and you could easily feed 2 adults and have a portion left over for lunch the next day. While the rice is doing it’s thing, you can prepare the rest of the meal. No fussing about. 20 minutes later, dinner is on the table. Leftover rice is also brilliant to make good fried rice. Anyway, here’s my recipe for Coconut Rice.

You will need:
2 cups of long grain or basmati rice – rinse and drain well
2 cloves of peeled garlic – leave whole
1 slice of ginger – skin and all
1 stalk of lemongrass – bruised
1 lime or lemon leaf or pandan leaf
Salt to taste (I don’t usually bother with salt)
Liquids totalling 4 cups:
1 tin of coconut milk + Water or stock (or Stock cube)


Method:
Everything goes into a rice cooker, flick it on – once it finishes cooking, stir carefully with a fork and serve.
