We had visitors on Sunday night and I was in a state of panic as I hadn’t really put much thought into planning dinner for them. We were out all day as well, so we did a quick stop at Coles to buy ingredients for dinner. The plan at that stage was to make mini Pita Bread pizzas as starters. When we got home, it was mad rush to clean up the house and get ourselves ready, it was only then, that I realised we bought everything except the Pita Bread! I didn’t want to send Mangy out to get the bread in case the visitors arrived while he’s out, and I wouldn’t have a clue on what to say!
So I used puff pastry instead! I always keep puff pastry in the freezer as they make brilliant pies with leftovers as filling. Now I have another fantastic use for puff pastry.
- Puff Pastry Sheets (as many as you need to feed your crowd)
- Tomato Sauce (any kind, I just used shop bought Pasta Sauce – straight from the fridge)
- Grated Cheese
- Capsicum – Sliced finely (again, use any vegetables you fancy, mushrooms would be nice)
- Chicken – sliced finely (We used tandoori chicken breast)
- Chilli flakes
Cut the sheets into quarters (no issue if the sheets are still frozen), place on a baking tray. I use a tray with holes, the sort that makes good chips. I find this ensures the bottom is evenly cooked without going soggy. Spread a thin layer of sauce and add toppings (2 or 3 toppings are just nice I think). I put the tray in a preheated oven at full heat. The high heat cooks the pastry quickly and makes it really puff up and crisp. Just keep an eye as they’ll burn easily as well.
