Spicy Chicken Nuggets

This my take on Nigella’s Ritzy Chicken Nuggets. They are so addictive, don’t say you were not warned.

Ingredients:500 gm of Chicken Tenderloin (cut into small pieces)
1 packet of Ritz biscuits
1 teaspoon of red chilli powder
1 teaspoon dried parsley
Salt to taste
½ cup yogurt
½ cup milk
Oil to fry
Method:In a bowl, marinade chicken with yogurt and milk. You can leave this to marinade overnight. A couple of hours works too.

In a food processor, place all the other ingredients (except oil and lemon) and process until a medium-fine powder. Sort of like bread crumbs.

Remove chicken from marinade, scrapping off any excess yogurt/milk. Dip into biscuit mixture. Fry pieces in medium-hot oil, turning carefully to ensure the pieces brown evenly.

Remove from oil, drain well on paper towels. Before serving, squeeze a little lemon juice on the nuggets. Enjoy (with beer)!
