Quick Pickle Cabbage

We had little bits of a mix of vegetables leftover in the fridge and I wanted a recipe that would use them all up. I made this up on the spot, but it turned out really tasty.

You’ll need

  • 1 cup shredded cabbage
  • 1 carrot – sliced into matchsticks
  • 1/2 small turnip – sliced into matchsticks
  • 1/2¬†red onion – sliced finely
  • 3 cloves of garlic – peeled and crushed
  • 3 dried red chillies – broken into half
  • 1 tablespoon of peanuts – crushed coarsely, remove as much of the skins as you can
  • 1 teaspoon white vinegar (I use Chang’s Chilli Vinegar)
  • 1/2 teaspoon sugar
  • Salt to taste
  • Oil

Method:
Heat oil, add garlic and dried chillies, fry well. You’re trying to flavour the oil. Add the vegetables, vinegar, peanuts¬†and sugar, stir well. When the vegetables are half cooked and still crunchy, add salt to taste and remove from heat. Enjoy!
