In a lot of my recipes you’ll find me using roasted red chilli powder as opposed to regular chilli powder. This was a tip given to me by my friend Anu. She suggested that I try it out, and I must say I am hooked!
Since the powder is already cooked through, cooking happens very fast. There isn’t a need to stir and stir and stir until the rawness of the chilli powder dissipates.
Also, it’s very hard to use too much chilli, the powder has the kick you need, but it has some mellow undertones. So even if you’ve used too much, it’s hot without making you choke. I actually enjoy cooking even more now, because I know it’s hard to stuff up!
If I can help it, I’ll never go back to regular chilli powder. I use Araliya brand (just a random one I picked up, and I’ve been pleased with it) – the picture above isn’t the roasted version, but the packaging is similar.
