Quick and easy snack!

You’ll need:

  • 2 cups rice flour
  • 1/4 cup urad dal flour
  • 1 tablespoon butter
  • 1 teaspoon roasted red chilli powder
  • ¼ teaspoon turmeric powder
  • ¼ teaspoon cumin powder
  • 1 tablespoon channa dal (optional)
  • Pinch of hing
  • 1 sprig curry leaves – remove the stalk and cut the leaves finely
  • Salt to taste
  • Water
  • Oil (for frying)

If you decide to add channa dal, soak the dal in hot water for about 10 minutes.

Mix all the ingredients (except oil) with a little water, keep adding water until you get a soft dough. Knead well. Wrap the dough in cling film, leave to rest for about 5 minutes.

Break the dough into small balls. On a greased sheet of plastic or silicone mat, press the balls of dough out into small flat circles. Using a fork, prick the circles a couple of times. You don’t want the discs to puff up like puris, if they stay flat they’ll crisp up better.

Heat oil, on a low to medium heat, drop the discs of flour into the oil. Let the discs fry slowly. The slower they fry, the more crisp they get. When golden brown, remove, drain oil on a kitchen towel. Once cooled, store in bottles (if you have any left). Enjoy!
