Mum always keeps frozen prata in her freezer. It’s great emergency food, and guests love it with spicy curry. So if anyone drops by she’s always prepared. We went by my parent’s place this evening, but no one was home. I have the keys to their house so I decided to help myself to mum’s stash of frozen prata 🙂
Kottu prata is really easy to make and there is no fixed recipe. You can add anything to it. Mum sometimes adds eggs, sometimes left over cooked chicken or imitation seafood. She will even add leftover gravy and let it fry out and it’ll become the masala part of the kottu roti.
To make this super quick version, follow the recipe below.
5 frozen pratas
1 sprig curry leaves (discard stalk)
1 small onion (diced finely)
4 green chilies (sliced finely)
1 teaspoon ginger paste
1 teaspoon garlic paste
3 tablespoons Maggi Hot and Sweet Sauce
1 teaspoon red chilli powder (or to taste)
1 teaspoon coriander powder
1/4 teaspoon turmeric powder
1/4 garam masala
1 cup cooked chicken or lamb (sliced finely) (optional)
Salt to taste
1 teaspoon lemon juice
Fresh coriander (chopped finely)
Cook pratas as per instructions on packet. Then cut into small pieces. Set aside.
In a pan, heat 2 tablespoons oil, add curry leaves, onion, green chilies, ginger and garlic paste. Fry until onion is soft and cooked. Add meat. Stir well.
Add Maggi sauce, red chilli powder, turmeric, garam masala and coriander powder. Stir well. Add prata pieces and salt to taste. Add a little more oil and fry the mixture well. Once all the pieces are well coated, add lemon juice. Stir through chopped coriander, mix well and serve. Enjoy!
