Mangy’s Egg Khudukhuda

Mangy hates eggs (he eats like a fussy 3 year old) but he loves egg khudukhuda. I’ve googled endless variations of the word ‘khudukhuda’ and haven’t found a single recipe online.
Mangy insists that this is a family creation and he’s had it throughout his childhood. In fact, his cousins still eat this every morning for breakfast. Khudukhuda is so tasty I’d be happy to have it every morning as well, if only I had someone to make it for me! 
You’ll need:
3 eggs
1 tablespoon ghee
3 dried chillies (cut into quarters)
Salt to taste
Red chilli powder to taste
Method:
Heat ghee, add dried chillies, fry on low heat. You want to infuse the ghee with the chilli. Once the chillies have changed colour, push to the side of the pan. Break the eggs in and allow to set slightly. Sprinkle salt and red chilli powder on top. Quickly fold through the chillies, and serve hot. The eggs need to be slightly soft and piping hot and they go well with roti. If you like it really chilli hot, squeeze out the seeds from the dried chillies over the eggs before you eat. Enjoy!
