Spicy Carrot Salad

I’ve been flat out with work and Uni, so Mangy’s been doing most of the cooking 🙂 I can’t say I’m complaining, I feel rather spoilt actually. Hot meals prepared for me, lunches packed, what more can a girl ask for? This carrot salad is one of Mangy’s specialties.
It’s really tasty and so easy to prepare. I usually hate carrots, but will happily eat this. Mangy used a purple carrot too, we couldn’t resist them when we found them at Coles. But feel free to use regular carrots. Enjoy with hot rice.

You’ll need:

  • 2 large carrots – grated
  • 1 small red chili – sliced finely
  • 1 lime – juice
  • 1/2 teaspoon mustard seeds
  • Pinch of hing
  • Fresh coriander – chopped finely
  • 1 tablespoon oil
  • Salt to taste

 

Method:
Heat oil, add mustard seeds. When seeds start to pop, add sliced chili and hing. Stir quickly and pour over carrots. Add salt and lime juice to taste. Stir through fresh coriander. Enjoy!
