A friend at work introduced me to Ajvar. Ajvar is a chutney made out of blended grilled vegetables. It’s addictive and I’ve had a tablespoon or so of Ajvar with almost every meal ever since I received a bottle of it! This is one of my favourite ways of eating Ajvar. It’s a really good snack, low in carb but super tasty.
- 5 chicken deli slices
- 2 tablespoons Ajvar
- 1 wedge laughing cow cheese or equivalent amount of brie cheese (cut into 5 pieces)
- 5 baby spinach leaves
- 5 small prongs of fresh dill
Lay out the chicken deli slices on a plate, spread Ajvar thinly on to each slice. Place a spinach leave in the centre of each deli slice. Place a piece of cheese into each deli slice. Place a dill prong over the cheese and roll up the deli slice. Enjoy!
