This cake is really good for you. Made out of almonds…2 whole oranges and just eggs – no flour, no butter, it’s got all the right vitamins for a healthy breakfast and most importantly it’s good for the soul. We’ll just conveniently ignore the sugar, cream and chocolate in the recipe. After all my mother taught me, if you have nothing good to say, don’t mention it at all!The original recipe can be found here. My version below:
You’ll need (Cake):
- 2 navel oranges (lots of vitamin C!)
- 6 eggs
- 1 teaspoon vanilla extract
- 1 heaped teaspoon of baking powder
- 1/2 teaspoon of bicarbonate of soda
- 200g of ground almonds
- 250g of caster sugar
- 50g dutch cocoa powder
- ½ cup dark choc chips (the kind that hold their shape when baking) – (because you can never have enough chocolate)
- 250g dark or milk chocolate melts
- 1/2 cup of cream
Place whole oranges in a saucepan with cold water and bring to the boil before reducing the heat and simmering for 2 hours, or until soft. Drain the water and set aside to cool. When cool, cut the oranges in half and remove any large pips. Blend the oranges in a food processor until you have a smooth puree.
Line a cake or loaf tin with baking paper and preheat the oven to 180 Celsius.
Beat eggs and sugar together, add all the other ingredients until it forms a smooth batter.
Pour the batter into the cake tin and bake for about 1 hour or until a knife inserted in the centre of the cake comes out clean. (After 20 minutes, loosely cover the cake with foil to prevent burning before the cake is cooked through). Let the cake cool in the tin before removing.
For the glaze, place chocolate into a bowl. Pour the cream into a saucepan and heat until almost boiling and then pour over the chocolate. Let it stand for 5 minutes before stirring until smooth. Let it cool for about half an hour before decorating the cooled cake.
