We found these massive fresh Tiger Prawns at Springvale Market and had a real feast last night! They were sweet and so juicy. Four prawns were enough to feed the two of us!
- 4 Large Tiger prawns (shells on)
- 1 tablespoon butter
- 2 cloves finely chopped garlic
- 1 kaffir lime leaf – sliced
- Salt to taste
- Black pepper to taste
- Fresh coriander (to garnish)
- Lime wedges
Sliced down the length of the prawn from the front and then grill the prawns in the oven or in a BBQ. While the prawns are cooking, heat butter in a small pot. Add all the other ingredients except coriander and lime. When the garlic is golden and fragrant, pour this butter mix over the prawns. Garnish with fresh coriander and serve with a lime wedge. Enjoy!
