Almond Biscuits

We found these biscuits in a little cafe near the apartment we used to live in. The biscuits were lovely and super decadent as they were made purely out of almond meal. Unfortunately, they also made a huge dent in our savings at $6 for 4 little biscuits!

After much googling, I finally found the recipe online and have been baking them myself now. They’re very easy to prepare and great when you need to feed a large crowd. It’ll be an absolute hit at your next gathering!

The original recipe is slightly different, I’ve included my version below:

You’ll need:

  • 500g Almond meal
  • 5 egg whites
  • 250g castor sugar (original recipe requires 350g)
  • 1 teaspoon vanilla extract (original recipe also requires almond extract)
  • 100g glazed cherries (halved)
  • 150g icing sugar

Method:


Pre-heat oven at 160 degrees. Line a biscuit tray with baking paper. Whisk egg whites lightly. Mix almond meal, castor sugar and vanilla extract with a fork. Wet your hands and roll out the mixture into equal sized balls. Roll the balls into icing sugar and flatten in the palms of your hand. Press half a cherry into the centre of each biscuit. Bake for about 12 minutes at 160 degrees. You want to remove the biscuits as soon as they get some colour. Just a blush will do.

Place biscuits on a rack to cool completely. They will crisp as they cool. Enjoy!
