Palak Paneer

For such an easy and quick recipe, the ingredient list reads like a manual! Don’t be afraid to try it though, you’ll use mostly store cupboard ingredients and a majority of the items on this list are repeated throughout the process. You just need to add a little of each spice at different stages. 

Pav bhaji masala and Desi All in One Chutney are easily available in most Indian grocery stores.

You’ll need (toss paneer cubes with masala and then fry in hot oil on all sides until golden brown):

  • 300g paneer (cut into cubes)
  • pinch of chilli powder
  • pinch of turmeric powder
  • pinch of garam masala
  • pinch of coriander powder
  • pinch of cumin powder
  • pinch of salt
  • oil

You’ll need (blend together):

  • 250g frozen spinach (thawed)
  • 1 tablespoon butter
  • 2 green chillies
  • 1/2 cup coriander leaves
  • water (as required for blending)

You’ll need (for the sauce):

  • ghee
  • 1 inch piece ginger, 1 clove garlic, 1 green chilli, 1 tablespoon chopped coriander stems (make into a paste)
  • 1/2 cup canned diced tomatoes
  • 2 dried bay leaves
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1 teasspoon coriander powder
  • 1 teaspoon pav bhaji masala
  • salt

You’ll need (to finish off the dish):

  • 1 tablespoon cream
  • 1 tablespoon butter
  • 2 tablespoons Pattu’s Desi All in One Chutney (or similar)
  • methi leaves (crushed)
  • pinch of chilli powder
  • pinch of turmeric powder
  • pinch of garam masala
  • pinch of coriander powder
  • pinch of cumin powder

Method:

Prepare the sauce by heating ghee in a pan. Add bay leaves and cumin seeds. Once cumin seeds start to pop, add ginger/garlic paste and fry until golden. Add tomatoes and stir well. Add garam masala, cumin powder, chilli powder, turmeric, coriander powder and pav bhaji masala. Fry until oil separates from the paste.

Add blended spinach and stir well. Add paneer, salt and stir. Finish off with cream, butter, chutney, methi leaves, chilli powder, turmeric, garam masala, coriander and cumin powder. Serve hot with rotis. Enjoy!

Tip:

For a great sauce to go with your finger foods and grilled meats, whip some yoghurt with the All-in-one chutney.
