Avocado Mousse

We’ve been back from holidays for a week now and I haven’t really been up to cooking and blogging. So I thought I’ll start back with an easy recipe. Avocado mousse probably sounds crazy, but it makes a great dessert, trust me! There’s no cooking involved and kids and adults alike will lap it up!

You’ll need for the regular version (per serve):

  • 1/2 avocado
  • 3/4 teaspoon grated palm sugar
  • 2 tablespoons condensed milk (more or less to taste)
  • 2 tablespoons water (to help with the blending)
  • 2 tablespoons almond meal (for the topping)

You’ll need for the LC Version (per serve):

  • 1/2 avocado
  • 3/4 teaspoon LC brown sugar
  • 2 tablespoons LC condensed milk (more or less to taste)
  • 2 tablespoons water (to help with the blending)
  • 2 tablespoons almond meal (for the topping)

Method:

Blend all ingredients (except almond meal) together until smooth. Chill mousse in fridge before serving. Sprinkle almond meal on top and enjoy!
