Fried Okra with Peanuts and Sesame Seeds

I’m totally obsessed with crushed peanuts (it’s a really strange obsession considering I HATE peanuts generally). When I came across this recipe, I went a little crazy with happiness. It has all of my favourite ingredients.

Here’s my version below:

You’ll need (tempering):

  • 1 teaspoon mustard seeds
  • 1 sprig curry leaves
  • 2 dried chillies
  • Pinch of hing

You’ll need:

  • 1/3 kg Okra (remove tops and slice in half and then slice again into bite-sized pieces)
  • 1 tablespoon channa dal
  • 1 teaspoon cumin seeds
  • 1 teaspoon sesame seeds
  • 1/2 cup peanuts
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 2 teaspoons amchur powder
  • 2 teaspoons red chilli powder
  • 1 teaspoon sugar
  • 1 tablespoon chopped coriander
  • Oil for frying
Method:
In a hot pan, dry roast channa dal, cumin seeds, sesame seeds and peanuts. Grind to a coarse powder in a spice or coffee mill. Mix with coriander powder, garam masala, amchur, red chilli powder, sugar and set aside.
Heat oil in a pan, add tempering ingredients. Once curry leaves are crisp, add okra and fry for about 10 minutes until no longer slimy. Add a little more oil, add powdered peanut mixture. Keep stirring until the peanut mixture darkens and coats the okra pieces. Add salt to taste. Stir in chopped coriander and serve with rice or roti.
