My brother is visiting at the moment and as he’s my only sibling (hopefully – my dad was a flower child, so you’d never know), I’ve been spoiling him quite a bit. He was pretty hung over on Friday morning, so I thought waffles would wake him up a bit. Aren’t I sweet (awww..)?
You’ll have to excuse the photo, this wasn’t the best waffle. I was too busy looking after my baby brother (cue the aww again) to remember to take photos. So this was the last waffle – slightly burnt, but still very tasty.
These waffles really do come out golden brown, very crisp and light. The original recipe states that it serves 6 to 8, honestly they were so good, with second helpings I’d be surprised if you’re able to serve more than 4 adults. They’re also pretty quick to whip up once your egg whites are ready to go.
- 170g plain flour
- 15g baking powder
- pinch of salt
- 2 teaspoons sugar
- 1 teaspoon vanilla extract
- 2 egg whites (beat until stiff)
- 2 egg yolks (whisked)
- 1/2 cup melted butter
- 400 ml full cream milk
Mix all dry ingredients together. Add whisked egg yolks, vanilla extract, melted butter and milk. Stir well. Add egg whites and whisk until just combined. Prepare waffles in your waffle maker as per manufacturer’s instructions. Enjoy!
