White Toblerone and Lime Cake

I love all sorts of chocolate except white chocolate. White chocolate isn’t even real chocolate! Recently, I was left with a whole heap of white Toblerone mini bars when we finished all the dark and milk bars from a mixed bag. I figured one way to get rid of them was to make a cake. In good time too, Mangy needed to bring something into work for morning tea.

The white toblerone cake is surprisingly really good. I also added some lime to cut through the sweetness. I finished it off with some dark chocolate, manuka honey and lime frosting.

You’ll need (batter):

  • 250g butter, chopped
  • 100g toblerone White Chocolate, chopped
  • 100g white choc chips
  • 1 cup caster sugar
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 2 cups cake flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 eggs, lightly beaten
  • 1 teaspoon lime juice
  • 1/2 teaspoon lime zest

You’ll need (chocolate frosting):

  • 150g dark chocolate
  • 2 tablespoons manuka honey
  • juice of half a lime

Method:

Place butter, white toblerone, white chocolate chips, sugar, milk and vanilla in a bowl. Place bowl over a pan of boiling water and stir well until chocolate melts. Allow chocolate mix to cool. Add flour, baking powder, baking soda  and eggs. Mix until well combined.

Pour batter into a greased cake tin. Bake in a pre-heated oven at 160 degrees for about an hour until a skewer comes out clean. Allow to stand 10 minutes before turning out onto cake rack to cool completely.

To prepare chocolate frosting, melt dark chocolate over low heat. Add honey and lime juice and stir well. Allow to cool until chocolate thickens. Spread over cake. Enjoy!
