One of my favourite things about visiting India is being able to try out all the different biscuits. I love how they come in these tiny little single-serve (at least I hope they’re meant to be single serve) packages. My absolute favourites are the 50-50 biscuits and the cashew nut cookies, especially with a hot cup of Chai.
Here’s my version of the cashew nut cookies:
- 1/2 cup ghee
- 1 and 1/4 cup all purpose flour
- 1/3 cup rice flour
- 1/2 cup icing sugar
- 1/4 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/3 cup cashew nut (roasted and powdered finely)
- 2 teaspoon milk
- 1 egg white
- Pinch of salt
- Pinch of cardamom powder
Pre-heat oven to 160 degrees. Line a cookie sheet with baking paper. Beat ghee and sugar together until fluffy. Add vanilla extract and cardamom powder and mix well. Add flours, baking powder, cashew nut powder, milk and egg white and mix well. Place cookie dough on a sheet of cling film and roll into a log. Place in the freezer to harden (cookie dough keeps well in the freezer if well-wrapped).
When ready to bake, remove required of portion of cookie dough. Slice into cookie rounds and set on cookie sheet. Bake for about 10 minutes until golden brown. Allow to cool. Enjoy!
Dip cookies in melted dark chocolate and sprinkle roasted crushed cashew nuts on top. Allow to set in the fridge until chocolate hardens.
