Capsicum and Onion Pakoras

Ohh…what do you do when it is raining, dark and gloomy? You make chai and pakoras of course!You’ll need:

  • 1/4 green capsicum (sliced very finely)
  • 2 green chillies (sliced very finely)
  • 2 small red onions (sliced very finely)
  • 1 teaspoon chopped coriander leaves
  • 1 sprig curry leaves (chopped finely)
  • 1/2 teaspoon ginger garlic paste
  • 1/4 teaspoon ajwain seeds
  • 1/4 teaspoon cumin seeds (lightly crushed)
  • 1/4 teaspoon sesame seeds
  • pinch of hing
  • pinch of amchur
  • red chili powder to taste
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon garam masala
  • 1/2 teaspoon baking soda
  • 3 tablespoons besan
  • 3 tablespoons rice flour
  • salt to taste
  • little water
  • oil for frying

Method:

Mix all ingredients except oil and water. Once mixed, drizzle water until you get a crumbly mixture. You don’t want a paste, just enough to form crumbs. Heat oil in a small pot and pinch of bits of the pakora mix and drop into hot oil. I like really small crispy pakoras, but the size is really up to you. Fry until golden brown and serve hot. Enjoy!
