These cookies are THE ULTIMATE cookies. They are my absolute favourite and never fail to impress a crowd. Scoop them out onto a baking tray and freeze. They store well in the freezer for weeks in a zip lock bag. When you have guests, just pop them in the oven (no need to thaw) and about 20 minutes later, you would have turned your guests into devotees.
- 170 g unsalted butter, melted
- 170g brown sugar
- 80g cup white sugar
- 1 tablespoon vanilla extract
- 1 egg
- 75g plain yoghurt
- 2 cups plain flour (sifted)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup white chocolate chips
- 3/4 cup milk or dark chocolate chips
- 3/4 toasted old fashioned oats
Mix butter, vanilla extract and brown and white sugar. Add yoghurt and egg and stir well. Add flour, baking soda and salt and mix well. Add chocolate chips and oats. Using a small ice cream scoop, scoop out onto a lined baking sheet. Make sure to leave enough space between each cookie as they will expand. Bake in a preheated oven at 180 degrees for 12 to 15 minutes. If cookies are frozen, bake for addition 3 minutes. Once baked, gently move cookies on to a cooling rack. They will crisp up as they cool, but still have a fudgy centre. Enjoy!
