Soy & Mustard Grilled Salmon

20131224_183408j

We haven’t had grilled fish in a long while and when I came across some beautiful pieces of salmon fillets at the local wet market, I couldn’t go past them. If you’re making this recipe in a pan, leave the skin on. I cooked ours up in our barbecue and chose to remove the skin. Either way, the salmon tastes fantastic.

You’ll need:

  • 2 pieces of salmon fillets (skin removed)
  • 2 tablespoons soya sauce
  • 2 teaspoons mustard
  • 1 garlic (grated)
  • 1 shallot (grated)
  • Pinch of freshly cracked black pepper
  • Pinch of salt
  • 2 tablespoons olive oil
  • wedge of lemon

Method:

Whisk together soya sauce, mustard, garlic, shallot, pepper, salt and olive oil. Marinade salmon for at least an hour.

Pre-heat barbecue. Once hot, place the lemon wedge, cut side down on the grill. Grill salmon on both sides until cooked through.

In a separate pan, pour in any excess marinade and allow to thicken.

Pour some of the thickened marinade over the salmon, serve with grilled lemon on the side. Enjoy!
