I haven’t posted any new recipes in a while because we’ve simply been so flat out with work and family visiting. I have been cooking, but just haven’t had the chance to take the time out to type out recipes. We have also been sick (cough..cold..if you were wondering).
One of things I do when I’m sick is browse recipes and read about new food products online. You might think I’m nuts, but it’s actually the best time to do food research. If I’m sick, I don’t have much of an appetite, so that means I don’t buy on impulse and I don’t binge eat. I came across Chef Paul Prudhomme’s Magic Seasoning Blend on Amazon and was really pleased to find that it’s sold locally and at a very reasonable cost (this is very rare!). I ordered some and a couple of days later I got my greedy little hands on a cannister and couldn’t wait to try it.
Mangy and I were too sick to go out to get some good steaks, so I thawed some prawns that we had lying in the back of the freezer. The Magic seasoning worked a treat, a couple of minutes on the BBQ and it was incredible!
I imagine this recipe would work as well with any brand BBQ seasoning, cooking is all about experimenting and there’s not much to lose. So give it a try! I served it with a light salad and I must say I feel almost 100% better now.
- 1/2 kilo tiger prawns
- 2 tablespoons BBQ seasoning
- 1 tablespoon smoked paprika
- 1 garlic clove (grated)
- 2 tablespoons olive oil
- 1/2 teaspoon sugar (Omit if your BBQ seasoning has sugar)
Clean and prepare the prawns by cutting down the back. Remove the sacs. Using a knife, gentle cut deeper into the back of the prawn so you slightly butterfly it. Mix all the marinade ingredients together and mix with prawns making sure to get some of the marinade into the slits. Cover with cling film and set in the fridge for a couple of hours to hang out.
Heat your grill or BBQ until smoking hot. throw the prawns on, a couple of minutes on each side and that should do it. Enjoy!
