This is a great mid-week meal. Literally takes 10 minutes to prepare and the results are fantastic. You could use home made pesto, but I had some of the bottled stuff to finish up, so I used that for this recipe
- Salmon steaks (cut to the size you prefer)
- 2 tablespoons pesto
- squeeze of lemon
- 1 teaspoon dijon mustard
- salt and pepper to taste
- olive oil
Mix pesto, lemon juice, mustard and salt and pepper together. Set aside.
Using a paper towel, pat the salmon steaks dry. Sprinkle salt and pepper on the skin side of the salmon.
In a hot pan, add olive oil and swirl around to ensure bottom of pan is well coated. Place salmon skin side down. Sprinkle salt and pepper on the top side of the salmon. Allow the salmon to cook until you see the bottom half of the salmon turn white. It should be just before the middle of the steak. Turn the salmon on it’s side and sear the side for about 2 minutes. Now flip the salmon over so the top is touching the pan. Watch it until it turns white, meeting the first half in the middle. Turn it one last time on it’s other side, searing it for another 2 minutes.
Spread the pesto mix over the top of the salmon, serve hot. Enjoy!
