If you manage to get your hands on some super fresh fish, this is the perfect recipe to try. I used Barramundi fillets, but snapper or any other white-fleshed fish would work as well. It’s a really quick dish to prepare. The flavours are also very simple. But if the fish is really fresh, it will taste incredible. I caught the tail-end of a program on TV the other night and it was an interview of a chef. He was going on and on about these garlic noodles and how he desperately needed to steal the recipe. Scallop Sandwich & Chilli Mayo

I haven’t been posting much as we’ve been pretty busy with work, visitors, travelling etc. We have also been eating out far too much and last night I decided we really need to cut down on the gluttony. This recipe was really quick to throw together (we always have frozen scallops in our freezer) and the result was better than any gourmet meal. Simple and light, but still very interesting and tasty. Lemon & sage butter pasta with seared scallops

If I wasn’t such a pig, I’d say this is the perfect date night meal. It’s elegant and fresh, rich but still light. The plump scallops add a decadent touch to an already incredible dish. But the truth is, this tastes so good I’m usually too busy scoffing it down to pay much attention to romance. In case you’re wondering, Mangy is no better.
